What does three up and three down mean to you, airman?

On Saturday I went to Seoul to see some horses running around a track. One of the first times that I've really been involved in anything to do with horse racing (I don't include the 50p bets my dad put on the Grand National for me when I was 10).
I had slept in so missed a shed load of the day but managed to catch a few of the later races. Getting there I was handed a form sheet, and after a quick perusal of all that was going on in the coming races I was none the wiser.
Surely whether they won last week or not only matters if they were racing the same horses?
Also as I have noticed back home all the horses had funny names (these were in English), are there ever horses called normal names like 'David', 'Scott' or 'Alanowski'? I think that there should be.
I have had it on great authority from an old friend that horses involved in showjumping style events that have good pedigrees have the name of their mother and father in their own name (or similar versions of them). Those of you with equine knowledge please clue me up on this.
I lost some money, as I only bet on the ones with the funniest names.
After the races we headed for the food and managed to convince the entire waiting staff and owners that I was the sub goalie for Chelsea, cue me having my picture taken with a bunch of them and being asked for autographs.
Then into the grubby area of Itaewon for some beers and a dance.
